I wonder if Fats Domino would have been thrilled about these blueberry muffins because they are a big hit with my family. These are so easy to make and are so delicious I think if you give them a try they will be a big thrill for you and your family over the holiday break. From our table to yours made with love we offer nothing but the very best.
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup sugar
1 teaspoon vanilla
1 ½ cups milk
1 tablespoon lemon juice
¼ cup melted butter
1 lb of fresh blueberries
In a large mixer add flour, baking powder, baking soda, sugar and salt. Mixed together until well combined. Using a one cup measuring cup measure out half a cup of cold milk and add one tablespoon of lemon juice to the milk. (The lemon juice should make the milk curdle.)
In an another bowl add the melted butter and egg. Then add all of your wet ingredients to the dry batter and combine being careful not to over mix. Add add 2 tablespoons of flour to your blueberries and combine until the blueberries are well covered. Add the blueberries to the mixture stirring them gently by hand so not to over mix the batter.
Preheat your oven to 350 degrees Fahrenheit. Line a muffin pan with liners and put one tablespoon of batter into each muffin tin. This makes about 15 to 18 muffins
Make sure to let cool before eating. Of course you can use buttermilk instead of our quick version but many people don't keep buttermilk around like our grandparents did.
