Here is the perfect recipe for a nice Valentine’s Day dinner or anytime you want to spend some quality time with your mate. It is quick and easy so you have more time for love.
2 boneless skinless chicken breasts
1 ½ cups seasoned breadcrumbs
32 oz of crushed tomatoes
1 tsp of garlic powder
1 tsp of Italian seasoning
¼ cup grated Parmesan cheese
1cup of water
In a 3 quart sauce pan over medium heat add your oil, onions and peppers. Saute until the vegetables are soft and translucent. Then add your mushrooms. Cook until the mushrooms are tender and has rendered a good amount of liquid. Then add salt, pepper, garlic powder, chopped olives, 1 cup of water and crushed tomatoes. Allow to boil until reduced and then allow to simmer for 15 minutes until the sauce is think.
Prepare your chicken by cutting away any fat that may be on the meat. Next wash your chicken with cool tap water and pat dry with paper towels. Set the chicken aside while you prepare your breadcrumb batter.
The batter is a dry-wet-dry batter of flour, egg, and breadcrumbs. To prepare our batter first we need to season the egg mixture with parsley, garlic powder, and black pepper. Then we are to season the breadcrumbs with black pepper, grated Parmesan, salt, garlic powder, and parsley.
Once the batter is ready we will place the chicken into the flour, then into the egg and finally the breadcrumbs being sure to coat the chicken completely at each stage for good coverage.
Once all of you chicken is coated with breadcrumbs prepare a large 10 to 12 inch nonstick pan with 3 to 4 tablespoons of olive oil over medium heat. Once your pan is good and hot cook your breaded chicken breast for 2 to 3 minutes on both sides or until golden brown.
