Classic Homemade Sweet Potato Pie

​Here is the basic, classic sweet potato pie. It is surprising easy to make but will quickly become the favorite of your family. Just follow this simple guide and you will have a great sweet potato pie in time for the holidays. 
Ingredients
2 large sweet potatoes
1 cup of granulated sugar
2 eggs
¼ teaspoon salt
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 stick butter, room temperature
1 unbaked pie crust

Instructions
Fill a large sauce pan with water and bring it to a boil over high heat.

Next add unpeeled sweet potatoes to the boiling water. Reduce the heat to medium. Allow the potatoes to simmer until they are tender. This may take 30 to 45 minutes depending on the size of the potatoes.

Drain potatoes and rinse under cool water. Then peel the skin away from the potatoes and place them into a large mixing bowl. 

Mix the sweet potatoes with fork or potato masher until the mixture is smooth. You can use a food processor to make a completely smooth pie.

Next add your butter to mashed sweet potatoes and continue mixing until the butter is thoroughly combined.  Then add sugar and vanilla and stir. Continue to stir until all the sugar is dissolved. The potatoes should still be warm enough to dissolve the sugar.

Now we are going to add the eggs one at a time while continuing to mix the batter. 

Last we add the cinnamon and nutmeg and stir into the batter.

Pour the sweet potato batter into the unbaked pie shell. Place your sweet potato pie onto a baking sheet into a 350°F preheated oven. Allow to bake for 50 to 60 minutes or until crust is a light golden brown. The filling will have a slight jiggle in center when it is done. 

Allow the sweet potato pie to cool completely on a wire rack. Then cover and refrigerate until ready to serve. Your family will love you for all times.
